    Crispy Horseradish Mahi Mahi Recipe

    Prep time: 5 minutes
    Cook time: 10 minutes
    Servings: 4 Tags: Kid Friendly

    Ingredients

    1 c frozen shredded hashbrowns, thawed
    1 shallot, minced
    1 T prepared horseradish
    1 tsp Dijon mustard
    1/2 tsp garlic powder
    1/4 tsp pepper
    1/4 tsp salt
    4 portions of Mahi Mahi
    4 tsp light mayonnaise
    1 T oil

    Directions
    In a bowl combined the thawed potato, shallot, horseradish, mustard and seasonings.
    In a skillet heat 1 T of oil over medium heat.
    Lightly spread each Mahi Mahi fillet with 1 tsp of mayonnaise.
    Spoon the potato mixture evenly onto each piece.
    When the skillet is hot, carefully place the fish potato side down in the pan.
    Cook about 8 minutes potato side then turn, 3 min or until the fish is cooked through. Be careful during flipping so that
    you don't lose the crunchy crust.
    Serve with lemon if you wish.

            This looks so delicious but no one but me would eat it in my house. I will have to go by my Mom and dad and make this cause they would appreciate it. Looks yummy
