Ingredients: 2 Chicken breasts, 1 can hot jalapenos, 1 lime, low-fat cheese, lemon-pepper seasoning, for my side I used corn but rice would be good also.
Boil 2 ears of corn 10-15 mins, cut off the ear and season to taste.
Begin to cook chicken in skillet, cover with a moderate amount of lemon-pepper. Let the seasoning cook in for a bit then pour a few spoon fulls of the jalapeno juice over the breasts. As they near being done squeeze the lime over them and place a few jalapenos on top. Right before you take them out of the pan turn the heat on high and place cheese on top and allow to melt.
Garnish with more jalapenos if you want more heat, salsa is a good topping as well.
