I've worked at a lot of nice steakhouses and IMO if you have to put sauce on a filet to make it taste good, then its not a good cut of meat. Last place I worked at the filets were nicknamed baseballs because thats about the size and shape they were. You can literally cut them with a fork they are so tender.

italian, prime rib and seafood...I love it all!
