  • Pizza Omelet

    For Turbo3000!

The omelet(I guess that's the corect spelling?) is really quite simple, I like to cook both sides of the omelet so the difficult part for me is flipping it.
    But anyway---

I take 6 egg whites and 2 whole eggs and beat them
I cook it with a light spray of cooking oil in a non-stick pan until the top side is showing signs of thickening and then I flip it. If you prefer you could simply add the stuff at this point but I like the eggs a bit more solid.

Once it's flipped I add 10 slices of thin sliced pepperoni. With the strong flavor I'm sure half of that would be fine but i'm not dieting right now.
Then I add about 1/4 cup of low fat pizza cheese blend. If I can find the fat-free cheese that will be even better. If you can't find a "pizza blend" then you could simply add some cheddar, mozzarella or provolone, whatever really.

Fold the omelet and let it melt together for a bit and it's done.

6 egg whites, 2 whole eggs, 10 thin slices of pepperoni and cheese blend.

I haven't figured out the total nutrional values but if I can I will add it on this thread.

It's simple a very nice change from bland egg whites and it doesn't add to much fat if the pepperoni is not triple thick!

If sodium is something to be watching this may not be the best meal - very true. But damn is it tasty and easy - I made and brought 2 for my snacks at work!

I think the 1/2 serving of pep. is about 280mgs of sodium.
That and the eggs + cheese and OH BOY!! we're holding water!!

Of course if you drink almost two gallons a day it doesn't really have much of an effect.
