  • Eggplant a superfood

Eggplants Are known as aubergines. Eggplants are often mistaken for a vegetable when in fact they're technically a fruit. Eggplants are very dense in nutrients and high in antioxidants.

Antioxidants help protect the body from damage caused by free radicals. Antioxidants help to prevent a variety of chronic illnesses and diseases such as heart disease and different cancers.

Eggplants are rich in anthocyanins. This is what provides the eggplant with its deep rich purple color.

In eggplants anthocyanins are called nasunin and are especially beneficial. Multiple test tube Studies have confirmed its effects against free radicals. There are a few animal and test tube studies that show improved heart function and a reduction in LDL cholesterol and triglyceride levels although human studies are still needed.

Eggplant may assist and controlling blood sugar. Eggplants are known to be high in fiber which as you know passes through the digestive system intact. Fiber can lower your blood sugar by controlling the rate sugar is digested and absorbed in the body. Slower absorption keeps levels steady and under control. This will help prevent any spike or crash in your blood sugar.

Polyphenols found in eggplant reduce sugar absorption and help increase insulin secretion. Eggplants are high in fiber but low in calories, great for promoting weight loss.

(SRG's)are found in egg plant. (SRG) cause the death of cancer cells and help combat the reoccurrence of certain types of cancers.

Eggplants are easy to incorporate into your daily diet. They can be prepared in a variety of ways such as grilled ,baked ,roasted, sauteed ,and fried just to name a few.

So eat up and enjoy the benefits

never really jumped on the egg plant wagon. may be something good to add in even if it's just for a little additional fiber

Get Indian eggplant. It is much smaller but more tender and goes good in many dishes.

I roast it until tender in the oven with curry spice mostly. Sometimes I simmer it in a bottled curry sauce. It is good either way. Too lazy to actually do a whole dish though.

jrup. I eat tomatoes pretty much every day. I LOVE them. Just had bloodwork in my biometrics and kidney function was perfect.

I realize they CAN increase the chance of kidney stones but also reduce cancer by 20%. I have never had a kidney stone so I will continue to consume.
