I'm having trouble understanding your question. Are you working night shifts and your trying to figure out when to eat your meals? Do you just have very long shifts that limit you from timing your meals properly?

Carb loading is all about timing. You can't eat a load of carbs all in one meal. You need to space your meals out so your body utilizes them instead of storing it. Eating carbs before bedtime (no matter what time of day your bedtime is) depends only on your goals. If you are bulking (trying to gain muscle), then it's ok to each "clean" carbs before bedtime. However, if you are cutting (trying to loose weight), it is better to get your carbs in early while you active and cut them off before bedtime. You should always get your daily caloric intake regardless of what time it is because you body needs to refuel. The most important part is staying within recommended calories.

As one of my former diet coaches you to say, "eat all of your meals even it means you are eating your last meal on your way to the bed. Just don't get crumbs in the bed."
