Hair is dead cells and sun irradiates the the proteins and causes them to absorb different wavelenghts of light thus changing the color reflected that we see. Skin darkens because melanocytes produce melanin which is released into skin cells. Sun causes more melanin to be produced to protect you from the UV rays.
