The trick is division of responsibility. You tell your client, "I'm responsible for everything we do in the gym and you are responsible for everything you do out of the gym. Don't waste my time in here by eating twinkies. If you eat twinkies and junk food and you don't get any result you make me look like a bad trainer and that messes with my livelihood. So, if you can agree to give it 100% I will take you on as a client."
Don't mess with flakey clients. I used to have these three ladies I trained for only $25/hr because they were dedicated and loyal. They busted their butts in and out of the gym. They ate perfectly and they made me look good. So, I gave them a discount so people would see them train with me all the time. I had more clients than I could keep up with for a while. Thats how you do it. You reward the ones who give it all so they stay with you. The ones who don't give it all you need to cut loose. There is nothing worse than a reputation as a bad trainer. Even if you know your stuff, a bad or lazy client will make you look bad. Cut em loose and move on.
