    3 cups TJ's Organic Quinoa, cooked
    1 large TJ's Red Pepper (or 1 jar TJ's Roasted Red Peppers when in season), chopped
    1 medium TJ's Cucumber, peeled and chopped
    1/4 cup TJ's Red Onion, diced
    1/2 cup TJ's Kalamata Olives
    1/4 cup TJ's Extra Virgin Olive Oil
    Juice of one TJ's Lemon
    1 tablespoon TJ's Hummus
    Mix olive oil, lemon juice and hummus to create a dressing. Once quinoa has cooled, combine with roasted red peppers, cucumber, red onion and olives and toss with dressing. Serve chilled.
    Serves: 4 - 6
    Cooking Time: 15 - 20 Minutes
