So I bought a bean mix from the market (The one i bought is a blend of eight different types of beans including lentils)
you need six cups of some kinda bean mix.
so here's what you do.
-carefully pick through beans, removing small pebbles and naturally occurring foreign particles. Rinse thoroughly. soak beans in three times their volume of cold water for a min of four hours. After soaking, drain soaking water. Add fresh water, roughtly double the volume of beans, bring water to a simmer and cook the beans, uncovered, until tender, approx 1.5-2 hours. season with salt in the final stages of cooking. cool beans in cooking liquid or drain reserve. 1 cup dry yields approx 2.25 cups cooked (FYI).
and here's the ingredients i used yo...
-1/4 cup olive oil
-2 cups chopped onion
-2 med bell peppers diced
-6 cloves of garlic, minced
-2 tbs chili powder (i think i actually used three but i like it more spicy)
-2 tsp dried oregano
-1.5 tsp dried cumin
-1/2 tsp cayenne pepper
- 6 cups presoaked beans blend
- 1 cup of liquid you used to cook the beans in (preferable to use the last cup after you drain most of it)
- 1 can tomato sauce (16oz)
I made a garnish of chopped cilantro, a little (very little) sour cream, grated cheese and chopped green onions.
so here's how you mix all this stuff together.
heat oil in a heavy, large bottom sauce pot over medium high heat. add onions, bell peppers and garlic. saute until soft. add chili powder, oregano cumin and cayenne, stir for two min. Mix in the cooked beans, 1/2 cup of the cooking liquid and tomato sauce. Bring to a boil, stir, reduce heat and simmer until flavors blend and chili thickens, about 30 min. season accordingly with salt and pepper. garnish with whatever you like.
so I've made this two ways... on the stove and in my slow cooker... the slow cooker turns out way WAY better i cook it on low for bout six hours and its turns out great....
