    1 head cauliflower

    3 cloves garlic, chopped

    1⁄2 medium white onion, chopped

    I Can’t Believe It’s Not Butter spray

    1 tablespoon unsweetened
    almond milk

    Pepper to taste

    Lemon juice to taste

    1 tablespoon light sour cream to top

    1⁄4 cup chopped green onions to top



    Chop the cauliflower into small pieces and place them in a pot with water. Bring the cauliflower to a boil, and cook until it’s tender. Add the white onion and let it simmer. Strain and mash the cauliflower, mixing in almond milk, garlic, ‘’butter’’ spray and lemon. Plate and top with pepper, sour cream and chopped green onions. Serves four.
