    Re: Peanut Butter Banana Sandwich

Yum, I adore banana and peanut butter together!

Here is a recipe that I have been eating for awhile, I just kind of put things together.

I take 3/4 cup of egg whites and one whole egg. Mix well, and pour in a small frying pan. Once the eggs start to set a little, place 1/2 of a banana chopped up on top of the egg mixture.

Once it really looks set (make sure to get all the liquid from underneath to set), flip the whole thing over with bananas. On that side, I place a tablespoon of peanut butter (or some kind of nut butteR) on half of the egg mixture, fold it over like a omelette and just cook a few more minutes on both sides.

This is sooooooo good, its the joy of the peanut butter and the bananas, but also the beauty of the protein in the eggs!
