    Homemade Protein Bars
    Ingredients
    Nonstick spray
    1 cup soy protein powder
    1/2 cup unbleached all-purpose flour
    2 cups rolled oats
    1/2 cup oat bran
    1/2 teaspoon cinnamon
    3/4 teaspoon salt
1/2 to 2/3 cup (packed) brown sugar
    1 cup semisweet chocolate chips
1-1/2 cups plain or vanilla yogurt
    1/4 cup canola oil
    2 teaspoons vanilla extract

    Instructions
Preheat the oven to 350 degrees F (325 degrees F for a glass pan). Lightly spray a 9- by 13- inch baking pan and a baking tray with nonstick spray.

Mix together the protein powder, flour, oats, oat bran, cinnamon, and salt in a large bowl. Crumble in the brown sugar, rubbing it with your fingers to break up any clumps. Stir in the chocolate chips.

Measure the yogurt, oil, and vanilla into a second bowl, stirring until well combined. Add the wet mixture to the dry, and mix patiently until thoroughly blended. (You may have to use your hands -- it will be a thick batter, verging on a dough.)

Transfer the mixture to the prepared pan, patting it evenly into place with your hands. Bake in the center of the oven for 15 minutes, then remove from the oven and cut into bars of any size or shape. Place the bars on the prepared baking tray and bake for another 15 minutes, or until golden around the edges. (For extra-crunchy bars, turn off the oven and leave them in there for up to 45 minutes longer.) Remove the bars from the oven, and place them on a rack to cool.

Eat the bars within a few hours, or seal them in a heavy zip-style plastic bag and store in the freezer. For maximum crispness, "refresh" them in a toaster oven after defrosting.

    Yield: About 20 medium-sized bars

    Variations:
    Protein Boosters
You can make the main recipe with any combination of the following adjustments:

    • Replace the canola oil with 1/2 cup peanut butter or almond butter (softened in a microwave).
    • Replace the flour with quinoa, ground to a powder in a blender or an electric spice grinder.
    • Replace the yogurt with mashed silken tofu (soft or firm). Add an extra pinch of salt.
    • Add 2 to 3 tablespoons powdered egg whites.
    • Add up to 1 cup chopped nuts and/or sunflower seeds.

    Cook's Notes:
These homemade bars are very economical, and you get to select all the ingredients according to your own standards, needs, and taste. For nondairy bars, replace the yogurt with unsweetened applesauce, canned pumpkin, or mashed banana (Or try the silken tofu option in the Protein Boosters box.) Add an extra pinch of salt if using pumpkin or silken tofu. The range of sugar allows you to make these bars sweeter or not, according to your taste.

      Homemade protein bars..

      1 square unsweetened baker's chocolate
      2 Tbls. butter
      2 Tbls. heavy cream
3 pkts Equal (I used Splenda)
3 scoops (1 cup) Chocolate Designer Protein (or any other chocolate whey protein)
1 cup chopped peanuts (I used 1 1/4 cup chopped pecans)
1/2 cup unsweetened coconut (hence the above!)
2 Tbls. Sugar Free Torani Syrup or maple syrup (or water, in a pinch...) --I used the maple syrup, as that, our market had!
Melt choc and butter in mike 1 min; stir until completely melted. Add Equal and heavy cream and stir til creamy. Add protein powder, peanuts, coconut and stir till mixed pretty well, add syrup (or water), and mix thoroughly(you may have to knead with your handsat this point, as mixture will be very stiff). Line a bread loaf pan with plastic wrap and press in mixture firmly and evenly. Chill till firm. Cut into 6 bars. These were huge, so I made it into 9 bars.
Approx 5 carbs/15 grams protein per 1/6 recipe.

      Homemade Protein Bars

      3 1/2 cups rolled oats
      1 1/2 cups dry milk
      1 tbsp cinnamon
      1 cup lite syrup
      2 scoops protein powder
      2 egg whites
      1/4 cup orange juice
      1 tsp vanilla
1 cup craisins (cranberry/raisins, or cranberries or raisins) or chopped apple and chopped nuts

Mix all ingredients as you add them to each other and then in a waxpaper lined cookie sheet spread the mixture out. After you do this and before you bake them, take a butter knife and cut them into 10 squares. Put them in a 325' oven until lightly browned (about 15 minutes) and store them in an airtight container for up to 2 weeks without refrigeration.

      Makes 10 Bars 1Bar = 200 calories 12.2 g protein 25 g carbs.

      Natural Health and Strength
      This Make 16 Protein Bars

1 Cup of Natural Peanut Butter or LowFat Peanutbutter
      1 1/2 cups Honey
2 cups of protein powder (I use vanilla whey protein) (Chocolate is great too!)
      3 cups dry,uncooked oatmeal

      Directions:

Combine peanut butter and honey in a large nonstick pot, and warm it up over low heat . I start out with just the peanutbutter and honey, then add the protein powder, and finally the oats. You don't want to cook it, just heat it up enough to be able to stir it together.

Press into a 9" x 13" pan. Let them cool, and cut into 16 equal bars.(I cut them into 32 bars). Wrap each bar in foil or saran wrap and store in plastic baggies. No need to refrigerate, the ingredients are all natural.

      Nutritional Information:

        2 cups natural peanut butter:
        Protein-134.6g Carbs-108.4g Fat-246.6g Calories-2,972

        1/2 cup nonfat dry milk:
        Protein-21.3g Carbs-32.2g Fat-1.4g Calories-217

        4 tablespoons brown sugar:
        Protein-0 Carbs-52.4 Fat-0 Calories-204

        2 tablespoons honey:
        Protein-0 Carbs-16.7 Fat-0 Calories-62

        TOTAL:
        Protein-155.9g Carbs-209.7g Fat-248g Calories-3,455

Mix ingredients in large mixing bowl (if mixture is too
dry, add a little whole milk; if too moist, add a little
nonfat dry milk -- be sure to measure these other
ingredients and see back of book for nutritional
break-down so you can add this to total). Mix with your
hands, thoroughly mixing everything. Now, very lightly
butter cookie sheet, large, flat pan,or sheet of wax paper
and spread mixture out on it about 1/2" to 1" in
thickness, and in the shape of a square; than refrigerate
until it hardens. Remove from refrig. and cut into equal
pieces. Now, roll bars in sesame seeds that are spread-out
on wax paper, etc. Each bar will take about 1 tablespoon
        sesame seeds.

Let' s say that you made 12 equal-sized candy bars from
this recipe, each bar would have this nutritional analysis
        including the sesame seed):

        1 Candy bar:
        Protein-13+g Carbs-17.6g Fat-20.8g Calories-289+

That's a whopping handful of protein and other nutrition!
And it's so inexpensive, too! Keep these bars refrigerated
and eat one whenever you need protein

I did that this morning. Add milk and dry oats to bowl and microwave until done. Add 1-2 scoops protein. Add more milk if necessary. Protein Porridge!
