  • Cooked or Raw.... Does it make a big difference?

While on a strict cutting, low cal, low carb diet, does it matter if I cook my spinach and broccoli? what would be the big difference between cooked and raw? I just got to the point of my diet where I cut out all carbs except for post workout.

I always eat my veg raw.. I've heard that when you cook them they lose most of there nutrients. Also raw broccoli is more filling i find.

If cooking makes them easier to eat, cook them, but dont boil them, they lose all the good vitamins in the water then.

"Raw cultured vegetables have been around for thousands of years, but we have never needed them more than we do today. Rich in lactobacilli and enzymes, alkaline-forming, and loaded with vitamins, they are an ideal food that can and should be consumed with every meal" excerpt from www.rejuvenate.com

depending on your physical condition and your habits, raw has it's benefit. check out link.
