    Thanks for all your replies. My mom actually understood the whole thing after I printed out all the info I could find on the web. So maybe she's not an asshole after all... She's just against everything new... Stubborness is a family trait I guess

      You make good points and you understand the reasoning behind a low carb diet, it's just a lot of people go around spouting off how carbs make you fat blah blah. And I think its kind of dumb ya know. You at least understand the concept so I think our work is done here.
