successfully heat pasteurized 5 dozen egg whites

I heat pasteurized 5 dozen eggs just like Egg Whites International Its a really easy process.. First I seperate the egg whites( the hardest part). Then with a hand mixer I mixed up the eggs ( not to much dont want to whip them) Then fill a double boiler with water place the egg white mixture in the top half of the double boiler and turn on the heat..... Now all you have to do is slowly stir the mixture every few minutes and wait for the temprature to reach 135 degrees( oh yeah you also need a thermometer). Be very careful at this point the eggs will start to cook if the temprature rises anymore (but dont worry a very small part to the whites will begin to cook nothing to worry about) Once the whites hit 135 degrees turn on a timer for 4 minutes ( you may want to remove the boiler from the heat because the temprature may contuine to rise and further cook the eggs) just make sure if you take it off the heat the whites stay at 135 degrees. Once the four minutes is up take a strainer like this http://www.stainless-steel-kitchenw...-strainers.html to remove any cooked bits of egg( it will be a very small amount... put the mixture in the fridge and WAA LAA you're DONE!!!!!! go to http://www.eggwhitesint.com/healthfacts.htm to see all the different things you can do with them and the health benifits

5 dozen eggs at supermarket $5
5 dozen egg makes about 6 cups egg whites
1 gallon is 16 cups
It takes 64 cups to make 4 gallons
It will take about 50 dozen eggs to make about 4 gallons.


I know it sounds like a lot to egg crackin but if you dont mind gettin your hands dirty you can do 5 dozen eggs in about 10 minutes
