  • Your favorite cut of beef and a recipe

Im cutting right now and I really like red meat. I tried some extra lean stew meat which is good if you cook it long enough in a sauce. Then I tried some shoulder steak on the Forman and that was pretty tough too. So what kind of red meat do you guys eat when leaning up and how do you cook it?

fillet minion is real lean. at lest what ive had. It can get expensive if your going to use it often though. acutally you can get lean round steaks, and if you marinade them overnight they will be tender if you grill them. if you can afford it get the new yorks and grill them they taste great!

I like ribeye! Throw some seasoning on it and toss it on the grill.

Yeah Ribeyes taste great b/c of all the fat they have. I know that for a fact they have a lot of fat. You trying to ruin my diet?

I prefer Sirloin - grilled medium rare. I like to give it a nice peppercorn crust. Add a few s of soy sauce and you're good.

Flank steak is the leanest cut of beef on the cow. If I'm cutting I will through it in the oven on broil and season with Fajita seasoning. Then, when it's done I cut it into small pieces and mix it with pinto beans, Basmati Rice (very low on the glycemic index) and salsa. Very high protein, low to moderate carbs and low fat. You can adjust the carbs with amount of rice you put in, but with Basmati you are much better off then any of the bleached out instance rice. Basmati rice is as low or lower than many brown rices on the glycemic index scale.

marinated any lean beef in red wine and olive oil for 24 hours will make it more tender. Tasted pretty good too.

I like sirloin or round steak for lean cuts.

You could also find a nice lean roast and have the butcher cut it up for you. Pretty cost effective that way.

Try venison tenderloin or buffalo. My favorite is a big top sirloin or a N.Y. broiled over oak / mesquite coals, with a bit of cracked black and a pinch of kosher.
