actually, the yellow fin is uncooked, so you would think it would be higher in protien, not lower. but i have seen that before also ( albacore being better ).

yea, good point. try www.oceanbeauty.com they have yellow at 23.4 grams /3.5oz raw
and albacore at 25.2 grams /3.5oz rae..not alot of diff. but, albacore is higher.

The reason the uncooked is lower is because the uncooked still includes water weight. When you take an 8 oz steak and cook it and then weigh it, it loses weight because the cooking process will dehydrate it some. Compare the protein/oz of beef jerky to steak, jerky is much higher.
