can someone explain why sodium is bad when cutting? or for that matter, why is it bad or good at all?

Sodium is actually essential to muscle contraction and nerve transmission. Your body has a sodium- to- water ratio. The excess sodium in your body is excreted as soon as you have enough water to carry it out. So to keep sodium under control, drink more water. Now that's not an ok to just pour on the table salt and up your intake of processed foods. It's just a helpful hint on how to keep it under control.
