i heard you should take enzymes when you are consuming so many meals consisting of meat products to help with digestion....which ones are should you take and how much per meal or gram of protein???

Digestive enzymes and ginger root arent a bad idea to supplement with. Both arent essential, but will help with the process and make it a bit easier on the stomach and help with the absorbtion of protein, especially useful in high protein diets. I would follow hte recommended dose on the bottle, thats usually the most accurate.
