TweetSo I created a recipe and it turned out sooo good so I had to share!
3/4 cup + 1 TBS sugar
1/2 cup + 1 TBS unsalted butter, softened
2 eggs
3 ripe bananas
1/3 cup + 2 TBS skim milk
1 tsp vanilla
2 cups Trader Joes gluten free flour
1/2 cup chopped Brazil nuts
1/2 chocolate chips
1 tsp baking soda
1/2 tsp salt
- Preheat oven to 350
- grease bottom of 9x5 inch loaf pan
- Blend butter and sugar
- Add eggs and beat till mixed in
- Add bananas, milk, and vanilla
- In a small bowl, combine flour, nuts, chocolate chips, baking soda and salt: mix well
- Add dry ingredients to wet ingredients
- pour into greased pan
bake at 350 for 50- 60 minutes or until toothpick in center come out clean
It usually takes about an hour and 15 minutes in my oven so use the toothpick method to check if it is cooked through.
Cool for 10 minutes and remove from pan

TweetDon't know the calories to this but it has good fats from the Brazil nuts and I used organic ingredients, but of course you don't have to do that.

Tweeti wonder how they would come out with coconut or almond flour. i am pretty sure both are also gluten free

TweetIt is a no go with the coconut flour for me when baking. I think I just need to do a bit more reading on how to sub with it. I just replaced the same amount and learned after that you dont need as much because it is absorbant. In order to get the mix right I threw a few different things in there,lol. Going to try it now and if actually is good it will be a 1 hit wonder because i was throwing this and that in it
