4 boneless skinless chicken breasts
1 tbsp olive oil
1/2 yellow onion, chopped
3 cloves garlic, minced
10 ounces Fresh Express Baby Spinach
2 tomatoes, chopped
1/2 cup shredded part-skim mozzarella or crumbled feta
Directions
Flatten and butterfly cut chicken breasts.
Brown chicken and cook through.
Meanwhile, heat the olive oil in a separate pan. Add the onions and garlic, cook for five minutes, then add the tomatoes and spinach. Cook until the spinach is wilted.
Divide the vegetables among the chicken, top with cheese and heat in oven at 325 just until the cheese melts
