TweetThis soup offers a well balanced meal with lean protein, lots of vegetables, and garlic.
Ingredients1/4 cup(s) dried mixed beans
2 ounce(s) lean cooked ham
1 2/3 cup(s) low sodium chicken broth
1 ounce(s) chopped fresh spinach
1/3 tablespoon(s) minced garlic
1/4 cup(s) chopped celery
1/4 cup(s) grated carrot
1/3 cup(s) chopped roma tomatoes
1/4 cup(s) minced jalapeno peppers
1/4 cup(s) chopped onions
1/4 teaspoon(s) chili powder
1/4 teaspoon(s) black pepper
1/4 tablespoon(s) red wine vinegar
Directions
1.Cover dried beans with water and soak over night.
2.Put chicken broth and soaked beans in a large pot. Bring to a boil. Reduce heat and simmer for 1 hour.
3.Add all of the remaining ingredients, except the red wine vinegar, and cook for 50 minutes or until the beans and vegetables are tender.
4.Add red wine vinegar and salt to taste. Cook for 5 minutes.
