2 lbs of Cod
1 lbs of fresh cleaned Calamari
2 cups of whole wheat Pasta
2 cups fresh basil
1 cup of sliced almonds
1/2 cup dried cranberries
1 cup of sun dried tomatoes
3/4 cup of roasted Garlic or you could use 1/2 cup of chopped fresh
1/2 cup lowfat sour cream
1 tablespoon of Olive oil
1/3 cup of water
Cut calamari into bite size pieces and boil for 5 minutes... Non stick spray pan and Bake cod with lemon salt and pepper for 15-20 mins... Mix all other ingredients in blender enough that you can still see green from the basil but still fine.... Take the Calamari and put it in a frying pan with a tbsp of olive oil.. Fry it up at a high temp and season to taste... I use a lil parmesan, Garlic salt, and black pepper.... I came up with this last nite off the cuff and I liked it so much I'll make it again....
It is loaded with protein... I also only used half of the sauce and Cooked Calamari so I could freeze the rest znd eat it next week...
