Reversals can be either. The hook flip is used by wrestlers and BJJ artists. I think many of the reversals are used by both Jiu Jitsu and wrestling because they work. Technically, wrestling is grappling as is BJJ or even Judo or the Thai Clinch.

I would say the 2nd question is a BJJ move as there are no subs in wrestling. (Except catch wrestling)

I wrestled with a state champ team fro one season. Some of the hardest work I have ever done. But wrestling is about control, BJJ and Judo are about control + submission. Being on your back in wrestling is the worst position possible while in BJJ it is better than being on your stomach because you can defend and attack.
