Yummy!

Ingredients:

1/4 c. reduced fat creamy peanut butter
3 tbsp skim milk
1/2 (8 oz.) carton fat-free whipped topping, thawed
1 (3.4 oz.) package sugar-free instant chocolate pudding mix
1 3/4 c. skim milk
Finely chopped nuts (optional garnish)


Preparation:
Combine peanut butter and skim milk in a medium mixing bowl, stirring until smooth. Add whipped topping and continue to stir until creamy.
In a separate mixing bowl, combine pudding mix and milk. Stir briskly until mixture thickens and becomes smooth. Spoon the pudding and peanut butter mixture into a small parfait glass. Alternate layers, beginning with a chocolate layer, followed by a peanut butter layer and ending with a chocolate layer. Repeat with the remaining parfait glasses. Top each parfait with finely chopped nuts. Makes 6 servings.
