Ingredients
• 2 scoops Vanilla protein powder
• 1/2 cup egg whites
• 2 tsp flaxseed
• 2 tbsp almond butter
• Stevia to taste (toffee flavored works nicely)
• 1/3 cup oats
• 1/2 tsp vanilla
• 1 tsp cinnamon
• 1 apple
Icing
• 1 scoop Vanilla protein powder
• Milk
• Stevia to taste
Preparation
1.Spray a cookie tray with low-fat Pam and cover with parchment paper.
2.Grate apple with a cheese grater and then drain off the excess juice.
3.Mix together all of the cookie ingredients with the apple and drop by spoonfuls onto a piece of parchment paper.
4.Place in a 350 degree oven for approximately 10 minutes.
5.Mix together Stevia and protein powder. Add enough milk to make a thick icing consistency
6.Spread icing on the bottom of one cookie and sandwhich it together with another.
Makes 12 cookies.
