This recipe from the most recent Clean Eating magazine, sounds easy & tasty to me! I think when I try these, I'll add some walnuts!

No-Bake Chocolate Chip Cookies

1 1/4 cup raisins
1/2 cup pitted dates
2 cups whole oats
4 tablespoons agave or honey
2 tsp cinnamon
pinch of salt, to taste
1/2 cup cacao nibs (or reg chocolate chips)

Place raisins and dates in a food processor and chop into small pieces. Add oats, agave or honey, cinnamon & salt. Process to mix well. Empty into a mixing bowl and add cacao nibs. Mix well.

Use a tablespoon measure to portion cookies. Enjoy immediately, or chill before serving for a firmer texture.
