Too much of anythign can be a bad thing. But, if you want to add mass you need carbs. Period. The difference is good and bad carbs. This is determined by their glycemic index. The rate at which they convert to glucose. Carbs that covert quickly (rice, pasta, white potatoes, white breads, sugar, melons, pineapple) will give you unstable glucose levels. Carbs that convert slowly (basmati rice, brown rice, whole wheat pasta, sweet potatoes, whole wheat bread, cherries, apples, nectarines, peaches) give you stable levels of glucose. It's always better to have blood levels of glucose stable so you aren't going through really high insulin spikes to counter it.

Eat carbs throughout the day and eat carbs that are low glycemic, excpet post workout. This is the time your muscles need glycogen and they need it quickly. It is at this time that it's safe, and recommended, to eat high glycemic index carbs to get glycogen levels in your muscles back up. Also, poteins (amino acids) are carried to the muscles by glucose, so, it's another reason to have quick converting carbs with your post workout shake. If the protein digest quickly and there is no glucose to transport it to the muscles, then you lose the benefit.
