I have really bad knees from years of running i take glucosomine ((1-2 Grams ED) and when my knees started to hurt i would ice them after every workout and i would take it easy and just do leg extensions untill they felt better, remember never rush things. BTW i have heard that leg extensions strengthen the muscles surrounding the knee.
      Just my 2 cents

I was a catcher in highschool baseball and also in little league.(about10 years in all)It killed my knees.MSM and Glucosamine is a good start. Some good exercises for me:Half squats, one leg machine squats at the end of my workout with lighter weight, dumbell lunges.I do full squats too but I dont do too much weight.I still build up wieght it just takes longer.Squats are very important I wouldnt overlook them. May start with the half squat and work up too full squats.

Yes extensions will strengthen the knee area. If he has bad knees I would say stay away from any pressing movement unless he wants to ice it after each workout to reduce swelling in the joints.

I hate to say it but if he can not do any pressing movements what so ever then he may not be able to get much mass but not impossible.

It will all come down to genetics IMHO.
