6 eggs
2 tablespoons lemon juice
2 teaspoons vanilla
4 tablespoons soft margarine or vegetable oil
Equivalent 30 teaspoons of artificail sweetener the recipe I have says to use a sweetener containing cyclamates, I'm not sure if mine did or not.
32 oz cottage cheese

1 preheat oven to 350
2 have ingredients at room temp.
3 put all ingredients except cottage cheese in blender, blend thoroughly, gradually then add the cottage cheese.
4 blend until smooth
5 pour into a long narrow pan, like a loaf pan, to insure against falling
6 top with pure cinnamon if desired
7 bake for 45 minutes, or until cake is firm
8 turn off oven and leave cake there with the door open for about an hour, then chill. Overnight refrigeration will add to flavor.

You can add any no-cal brand syrup for variety if desired.

I lost the nutritional facts for this, but I'm pretty sure it is less than 3 carbs per serving.
