Chicken with guacamole, jalapeños, hummus, rice and veggies.

You can adjust the servings and spices anyway you'd like on this. One of my favorite simple meals that's great for those of us who can't handle plain chicken breast night after night.

Steam or boil brown or white rice and season as desired.

Load your plate up with raw veggies (broccoli, carrots, tomatoes, celery, etc)

Clean and slice fresh jalapeños

Prepare guacamole using 3 avocados, 1 diced tomatoes, salt , pepper, lime juice, and a bit of garlic if desired.

Prepare home made hummus or I just buy the sabra roasted pine nut version.

You can prepare how ever many chicken breasts you want using whatever method you want. I cube the chicken and season it with adobo and sauté it in olive oil.

Pile the chicken on your plate along with the rice and veggies, and then load the chicken up with desired amount of hummus, guacamole, and jalapeños. So f***in' good.
