TweetIngredients: 2 Chicken breasts, 1 can hot jalapenos, 1 lime, low-fat cheese, lemon-pepper seasoning, for my side I used corn but rice would be good also.
Boil 2 ears of corn 10-15 mins, cut off the ear and season to taste.
Begin to cook chicken in skillet, cover with a moderate amount of lemon-pepper. Let the seasoning cook in for a bit then pour a few spoon fulls of the jalapeno juice over the breasts. As they near being done squeeze the lime over them and place a few jalapenos on top. Right before you take them out of the pan turn the heat on high and place cheese on top and allow to melt.
Garnish with more jalapenos if you want more heat, salsa is a good topping as well.

Tweeta trick i use similar to this is i put my chicken breast in aluminum foil add in the jalepinos and some of the juice. i thin wrap it up and seal it tight and toss it on the grill for about 20 mins or so. i cant have cheese and any condiments with sugar and i try to be a little easy on sodium but this method def will sear in the flavor and keeps the chicken very very moist and tender

We had this again yesterday for our main meal. It's great for me cause Rake grills it just short of being done then allI do is simmer it about 6 minutes covered with ball the ingredients. This comes out so tender and juicy it's unbelievable. Thanks Animal for the great, quick recipe.
