      15 Minute Fajitas
      2 servings
      You will need: 2 boneless,skinless chicken breasts(sliced into strips), chopped bell pepper/onion,(about 1/2 cup each), low-sodium fajita seasoning packet, 1 can fat-free refried beans, and whole-wheat tortillas.
      Stir fry the chicken in about 2 table spoons of olive oil until thouroughly cooked. Add the peppers and onions along with the fajita seasoning packet and about 1/2 cup of water. Simmer for a minute or two. Have the tortillas warmed and the refried beans heated. Spread the chicken,onions, and peppers onto the tortilla. Add a tblsp. of the refried beans and garnish with fat free cheese or sour cream if you like.
      You can vary this recipe to include beef, shrimp, tomatoes, or mushrooms. Use your imagination!

      Asian Beef and Vegetable Pasta
      6 servings
      1/8 teaspoon red peper flakes
      3 large cloves of garlic
      1 1/2 pounds steak, cut into thin strips
      1/2 teaspoon salt
      1/4 teaspoon pepper
      1 teaspoon vegetable oil (you can use cooking spray instead)
      1 large onion, sliced
      4 large stalks celery, chopped
      1 small head green cabbage, chopped
      12 ounces wheat spaghetti cooked, drained
      1/2 cup low salt soy sauce

      Spray a large, deep skillet with cooking spray. Over medium heat, cook pepper flakes and garlic for one minute.

      Sprinkle steak with pepper. Add to skillet. Cook steak until no longer pink, about 8-10 minutes. Remove from skillet with a slotted spoon.

      Add a small amount of oil to skillet or respray with cooking spray. Cook onion and celery until tender, about 10 minutes. Add cabbage, cook stirring until crisp-tender, about 10 minutes.

      Add steak, spaghetti and soy sauce to skillet. Cook stirring until heated through. Serve hot.

      Almost Fried Rice W/veggies & Chicken
      6 servings
      2 cups of cooked brown rice
      1 16oz bag of mixed veggies (any kind)
      1 pack of chicken breast cut up
      3 table spoons soy sauce
      2 eggs (1 whole, 1 egg white beaten)
      Cooking spray

      Cook brown rice according to package set aside.
      Cook you cut up chicken breast until done set aside.
      Cook beaten eggs (scrambled style) set aside.
      Cook mixed veggies according to package.

      Spray large skillet with cooking spray, add chicken, eggs, and veggies. Stir and cook until heated through well. Add the 3 tablespoons of soy sauce (or according to taste) to mixture in skillet. Cook for about 10 minutes to make sure it is heated through.

      This is an excellent all in one meal and it can be put in containers and frozen for the next days meals good for lunch or dinner. Good for taking lunches or quick dinners for the week.
