TweetYou have to eat them raw right after they've been pulled from the ground to keep 100% of the nutrients. But steaming shouldn't deplete the nutrients by a lot I think? Maybe a 10% to 15% reduction? Just a guess!!!
Tweetyes most if not all vegies are better for you raw except carrots!! cooking carrots halfway (so they are still a little hard in the center) releases the beta carotine (sp?)

TweetNutrients are lost through boiling, but if you steam them you won't lose as many...you lose 3 times as much by boiling compared to steaming.
