Of the countries you mentioned, Singapore would be my choice. I have not been there, however my ex-girlfriend worked there for a few yrs and loved it. I have not heard anything bad about it from anyone. Taiwan and Brazil would be cool but not sure how safe, especially Taiwan. Make sure you look into the area you would be working. Most likey it would be in the city where there are many americans and a very diverse culture. Also, the language barrier may be an issue. I have found that in the Asian countries people tend to not speak english, even if they know how to, it seems many are rude and simply do not wish to communicate with americans. Yet, if you are there working for a company you will meet many others in your situation I'm sure. Mexico is nice depending on the area, but dangerous nonetheless. My girlfriend is from Veracuz, Mexico. She tells me it is nice and so is Mexico City. I have been to Mexico city a few times but only for layovers.
Hope this helps.
