      So what kind of smoker do you have?

      What do you cook the best? (pork, beef, chicken)

      what wood do you prefer?

      I have read great things about the big green eggs but they are expensive.

      I have an upright smoker made of 1/8" steel, it is good and heavy with a 24" fire box
      I still am hit and miss for briskets but all else is great
      I use oak or pecan, hickory if i can find it too.

      I like trying new things

      i took thin porkchops, pounded them thinner, rolled them up with slivers of jalapeno, sharp irish cheddar and some asiago for a little pungency. wrapped it in bacon rolled it in some homemade dry rub and they were GOOD!

      also did some stuffed peppers. one was cheddar and BBQ sauce then wrapped in bacon the other was mozzarella, asigao, kale and honey then wrapped in bacon. I thought the kale would balance the sweet of the honey. they were all good.

      also a pork roast and 2 briskets.

      and as it only takes an hour, for breakfast i took a chub of lowfat breakfast sausage, rolled it in BBQ rub and smoked it for 1 hour. slice it up with some eggs and DAMN!

      Your speaking my language brutha..

      I have both a gas and regular charcoal barrel grill . I also have a little chiefs smoker as well as a bigger hotter smoker. Each serve there purpose . Apple wood seems to have great flavor. I like cedar planks with fish especially salmon. I use all the woods tho.
      Chicken breast and flank are my go to foods. Have not been able to master the brisket , either its great or awful.. jalapeņo bacon 5hr smoke on the little chief and grilled right before eating in the shizzal.

      Dont care for the ready light charcoal at all. Prefer the mesquite .. man I miss my bbq. Cant wait to get home

      a grill would be difficult to maintain a temp for slow and low cooking but dammit it is great for so much. only fire up the smoker occasionally as it is kind of a pain, you must babysit it for hours

      Love grilling. But would love to have a smoker. Worked with a guy who has one and man that stuff is good.

      now were talking jipped...

      I have a gas weber that I cook steaks and burgers on but I also have a cook shak fast eddie pellet smoker and that thing kicks ass...

      I don't have it now bc I had to move into a smaller house while for my house I am building gets done after it does in the winter it will be smoker time.. the new house also has a outside kitchen.. the pellet smoker is very easy set the temp and check it every now and then.. it keeps a constant temp once you set the little computer thing it comes with...

      haven't done a brisket but its on my list.. had a local bbq place that I go to for lunch that had brisket and it was freaking great they stopped making it bc of the cost and time it took to make said they weren't making enough money on it.. I was like damnit.......everytime my friends and I go there for lunch we tell the waitress we want brisket...
