TweetCored jalapenos and Anaheim peppers
stuff with ground beef (browned with chopped onion, garlic, sundried tomato, cumin, chili powder, salt and pepper)
i stuff the peppers with a glob of cream cheese, meat, cheese, meat until full
wrap with bacon and smoke for 3 hours at 225-240 (used hickory wood)
the last hour I brush on a sweet BBQ sauce
these things are so good they will make you put back stuff you didn't even steal!
Also did the obligatory pork and beef but I love trying new things. going to play with different cheeses and maybe meats (i have elk, buffalo, and whitetail in the freezer)
