Carbs are gonna be hard to do given your circumstances. I would always recommend a low-glycemic carb, especially if it will be some time between meals. Would fruit be possible? The alternative is to find or MAKE a healthy "bar." I'm sure I could find a good recipe that uses oats, dried fruit, honey or molasses, etc.
I won't even touch on protein... you know what works for you. How often can you take a break and get to your cooler?
Fats would easily be accomplished with nuts. I'm a huge fan of raw almonds, and when I'm not going to be home to eat I will usually pre-weigh 'em and put them in ziplock sandwich bags. Mixed nuts would be fine, as well.
