The grains have been allowed to start to sprout. The plant wants to grow and then it is milled. So instead of a hard dry seed it has a little green plant trying to grow.

It changes the glycemic index of the bread and reduces it by a very large margin. I like heavy grainy 100% whole wheat or whole grain breads a lot. Ezekiel bread is good too but it need to be kept frozen or at the least refrigerated as it goes bad a lot faster.

It is very dense and filling. If you want light fluffy bread this ain't for you.
