mexican egg wrap

i love making this:

1 whole egg + 4 whites
1 slice soy cheddar cheese
1 large whole wheat tortilla
diced onions, green peppers
jarred jalapeno peppers
cholula hot sauce

1. saute onions and peppers in MCT oil or olive oil/PAM spray
2. add jalapenos
3. pour in eggs and make into an omelette
4. add soy cheese
5. put into tortilla, wrap like a burrito and add tons of hot sauce
