It changes the glycemic index of the bread and reduces it by a very large margin. I like heavy grainy 100% whole wheat or whole grain breads a lot. Ezekiel bread is good too but it need to be kept frozen or at the least refrigerated as it goes bad a lot faster.

It is very dense and filling. If you want light fluffy bread this ain't for you.
it's tough as hell too. the 9 grain one isnt as bad as the regular but it is still pretty tough haha
