TweetMade up a new recipe yesterday, and these turned out yummy! Because of no flour they do come out flat, but are still very good. When I make them, again, I am going to use less sugar. Since baking is such a Science, tweaking the recipe can really change the end result. You can definitely play around with different extracts, nut butters, and add chocolate chips, which should only affect the taste. A little concerned about the carbs? Then I would say great post workout treat or quick energy!

Ingredients
1/4 cup butter
1 1/4 tsp baking soda
3/4 cup sugar
3/4 cup brown sugar
3 cups Gluten free Rolled Oats
1 cup dried cranberries
2 eggs
1 cup almond butter
1 tsp vanilla
2 tbsp fresh orange rind
Preheat oven to 350
Combine sugars, and butter, beat till creamy
Add eggs, vanilla and baking soda
Stir in oats, cranberries and orange rind
Drop dough on lightly greased cookie sheet
Bake 10-12 minutes
