Warm & Healthy Apple Cinnamon Crumbl

There’s just something about the smell of warm apples and cinnamon filling your home on a crisp, autumn day. Typically, apple pies or apple crumbles are loaded with excess sugar and fat, which might lead us to avoid baking them. However, now you can have your apple crumble aromas and eat it too without worry! My Apple Crumbles have 300 calories and NO added sugar! Time to start baking so that you can happily enjoy all of the flavors of the Fall season.
• 3 medium Pink Lady apples (or tart apple of your choice), peeled, cored, and chopped
• 3 TB granulated stevia (or your preferred sweetener)
• 1 tsp cinnamon
• 1 tsp. vanilla extract
• 1 tsp. lemon juice
• 1/2 tsp. pumpkin pie spice
• 1/2 tsp. salt
• ½ cup Jamie Eason vanilla Whey Protein Shake, or vanilla whey of choice
• 1/3 cup oat flour
• 3 TB finely ground hazelnuts (you can sub nut of your choice)
• 2 TB coconut flour
• 2 TB coconut oil (melted)
1. Preheat oven to 400F.
2. In a mixing bowl, combine chopped apples, stevia, vanilla, lemon juice, pumpkin pie spice, and salt. Toss well to coat. Set aside.
3. In a separate mixing bowl, whisk together whey protein, oat flour, hazelnuts, and coconut flour. Pour coconut oil over dry ingredients and mix with a fork, breaking up any large chunks, until nice and crumbly.
4. Divide apple mixture among 4 small oven-safe ramekins and top each with 1/4 of crumble mixture.
5. Place ramekins on a baking sheet and bake approximately 30-35 minutes, until the apples are nice and tender and the crumble topping is golden brown. Enjoy!
